Recipe | Cinnamon Buns

Ingredients

  • 175g of warm milk
  • 1 sachet of instant yeast
  • 50g of sugar
  • 1 egg (room temperature)
  • 60g of melted unsalted butter + 60g of room temperature butter
  • 360g of bread flour
  • A pinch of salt
  • Matcha or Cacao powder (optional)
  • 1 cup of brown sugar
  • Cinnamon powder 

Instructions

  1. Microwave milk for 40 - 60 seconds in a big bowl
  2. Add yeast and sugar when the milk is still warm and mix well
  3. Add egg and mix well
  4. Microwave butter in a covered bowl for 30 seconds and then 10 seconds
  5. Mix the butter in its bowl until well melted, then add it to the big bowl and mix well
  6. Add flour slowly until it forms a dough. Use the hand mixer to knead the dough
  7. Spread oil in the big bowl and leave the dough to rest until doubled in size
  8. Mix brown sugar and cinnamon powder together
  9. Knead the dough and divide it into 2-3 portions
  10. Take 1 portion at a time and flatten it out with a roller
  11. Spread the butter thinly and sprinkle the brown sugar and cinnamon mixture on top
  12. Roll and cut into 4-5 pieces
  13. Repeat until done, and let the pastry rest until doubled in size
  14. Bake for about 15 minutes at 175°C with the fan on
*I skip the icing on top as the buns are already sweet as they are.
