Recipe | Apple Yoghurt Muffins

Ingredients
- 2 eggs
- 2 Greek yoghurt pots
- Sugar to taste
- Vanilla
- 240g self-raising flour
- Cinnamon
- Salt
- Baking powder
- 2 apples (diced)
Instructions
- In one bowl, whisk the eggs, sugar, yoghurt and vanilla until well combined.
- Add flour, cinnamon, salt and baking powder slowly.
- Add diced apples and mix well.
- Bake at 180 °C for 30-35 minutes or until the top is golden brown.
Tips
- Use chocolate chips or M&Ms instead of apples to make chocolate muffins
- Use other frozen fruit to make berry muffins
- Add oats (and reduce flour)
