Recipe | Apple Yoghurt Muffins

Ingredients

  • 2 eggs
  • 2 Greek yoghurt pots
  • Sugar to taste
  • Vanilla
  • 240g self-raising flour
  • Cinnamon
  • Salt
  • Baking powder
  • 2 apples (diced)

Instructions

  • In one bowl, whisk the eggs, sugar, yoghurt and vanilla until well combined.
  • Add flour, cinnamon, salt and baking powder slowly.
  • Add diced apples and mix well.
  • Bake at 180 °C for 30-35 minutes or until the top is golden brown.

Tips

  • Use chocolate chips or M&Ms instead of apples to make chocolate muffins
  • Use other frozen fruit to make berry muffins
  • Add oats (and reduce flour)
